INGREDIENTS:
- Indian Brinjal - 5
- Green chili - 7
- Chopped onion - 1
- Chopped tomato - 2 cup
- Green pea - 1/2 cup
- Coriander powder - 3 teaspoon (tsp.)
- Turmeric powder - 1/2 teaspoon (tsp.)
- Chili powder - 1/4 teaspoon (tsp.)
- Coriander leaf - a handful
- Curry leaf - a handful
- Oil - as needed
- Salt - as needed
PREPARATION:
- Coat the brinjal with oil and roast them in pan. Cool the roasted brinjal and remove the skin and mash them.
- In a pan heat oil. Add onion and sauté until onion turns translucent (golden brown)
- Now add tomato, green chili and sauté until oil separates.
- Now add green peas, salt and cook for 2 minutes.
- Now add coriander leaves, curry leaves, coriander powder, turmeric powder, chili powder and sauté for few minutes. Now add 1/2 tumbler (cup) of water and bring to boil.
- Now add the mashed brinjal and cook until oil separates.
- Serve this with rice.
