INGREDIENTS:
- Brinjal - 1/4 kilogram
- Finely chopped onion - 1
- Finely chopped tomato - 2
- Ginger garlic paste - 1/2 teaspoon (tsp.)
- Chili powder - 1 teaspoon (tsp.)
- Turmeric powder - 1/4 teaspoon (tsp.)
- Coriander powder - 1 teaspoon (tsp.)
- Garam masala powder - 1/2 teaspoon (tsp.)
- Dry ginger powder - a pinch
- Slit green chili - 2
- Finely chopped Curry leaf - 5
- Coriander leaf - 7
- Sesame oil - 6 tablespoon (tbsp.)
- Salt - as needed
PREPARATION:
- Coat the brinjal with oil and roast them in open flame. (skin will shrink and brinjal will crack open). Remove the skin and mash them by hand.
- Now add chili powder, coriander powder, turmeric powder, garam masala powder, salt as needed, curry leaves, dry ginger powder to mashed brinjal; mix well and keep it aside for 10 minutes.
- Heat oil in a pan. Now add onion and sauté until it turns translucent (golden brown).
- Now add the tomato and sauté until oil separates.
- Now add ginger garlic paste and sauté until raw smell is gone.
- Now add the mashed brinjal and sauté in medium heat until oil separates. Now garnish with coriander leaf and serve.
