INGREDIENTS:
- Potato - 1 big
- Chopped onion - 1
- Chopped small tomato - 1
- Mustard seed - 1/2 teaspoon (tsp.)
- Fennel seed - 1/2 teaspoon (tsp.)
- Split Bengal gram - 1/2 teaspoon (tsp.)
- Curry leaf - little
- Dry chili - 2
- Turmeric powder - 1/2 teaspoon (tsp.)
- Coriander leaves - little.
- Oil - 2 teaspoon (tsp.)
- Salt - as needed
PREPARATION:
- Cut the potato into small cubes. Boil and cook them until they are cooked 3/4th by adding salt as needed. Once cooked drain all the liquid and keep it aside.
- In a pan heat oil. Add mustard seeds, fennel seeds, split bengal gram, curry leaves, dry chili and sauté until they mustard seeds stop splattering.
- Now add onion and sauté until they become translucent (golden brown).
- Now add tomato, turmeric and sauté until tomatoes become mushy.
- Now add the boiled potato cubes, salt if needed. Place a lid and cook this in simmer for 5 minutes. NOTE: time to time stir to avoid burning.
- After 5 minutes. Cook until the masala is coated well with potato. Before removing from heat garnish with coriander leaves and mix well.
NOTES:
- Goes well as side dish for rice.
