INGREDIENTS:

  1. Chopped Egg plant (Kathirikai) - 3 count
  2. Chopped Tomato - 2 count
  3. Chopped onion - 1
  4. Chili powder - 1 tablespoon (tbsp.)
  5. Bengal gram - 1 tablespoon (tbsp.)
  6. Mustard seed - 1 teaspoons (tsp.)
  7. Turmeric powder - 1/4 teaspoon (tsp.)
  8. Coriander powder - 1 tablespoon (tbsp.)
  9. Curry leaf - from 2 sprig
  10. Tamarind - small lemon size
  11. Slit green chili - 3
  12. Salt 1 teaspoon (tsp.)
  13. Oil - 2 tablespoon (tsp.)

PREPARATION:

  1. Soak tamarind in 1 cup of water for an hour. Now take juice Now add 1 more glass of water and take juice.
  2. In a pan heat oil. Add mustard seeds, Bengal grams curry leaf and sauté until mustard seeds, curry leaves stop splattering and the bengal gram is roasted to golden brown.
  3. Now add chili powder, coriander powder, turmeric powder salt and sauté for one minute. Note: make sure you don't burn.
  4. Now add chopped onion, slit green chili and sauté until the onion turn translucent.
  5. Now add chopped tomato and sauté until the tomatoes become mushy.
  6. Now add the egg plant (Kathirikai) and sauté for 5 minutes.
  7. Now add the tamarind juice and bring to boil. Continue cook until the gotsu foams. Now mix well and bring the heat to simmer. Cook this for another 2 minutes remove heat and serve.

NOTES:

  1. Goes well with dosai, idli.
