INGREDIENTS:
- Brinjal (egg plant) - 1/4 kilogram
- Onion - 2
- Tomato - 2
- Turmeric powder - 1/2 teaspoon (tsp.)
- Chili powder - 1 tablespoon (tbsp.)
- Coriander powder - 1 tablespoon (tbsp.)
- Cinnamon stick - small piece
- Clove - 1
- Curry leaf - 1 sprig
- Coriander leaf - 1 sprig
- Oil - 1 tablespoon (tbsp.)
- Salt - a needed.
PREPARATION:
- Chop onion, tomato, brinjal into small pieces.
- In a pan heat oil cinnamon stick, clove, curry leaves. Once the curry leaves stop splattering add onion and sauté until they turn translucent (golden brown).
- Now add the tomato and cook until oil separates.
- Now add turmeric powder, chili powder, coriander powder and sauté until the raw smell is gone.
- Now add the brinjal (eggplant) pieces and sauté for 2 to 3 minutes.
- Now add 1/2 tumbler of water, salt. Cook this until the brinjal is cooked well and serve.
NOTES:
- You can also cook this until oil separates as well.
