INGREDIENTS:

  1. Basmati rice - 1/2 kilogram
  2. Shrimp or Prawn - 1/4 kilogram
  3. Bay leaf - 2
  4. Cinnamon stick - 2 pieces
  5. Sliced Onion - 1/4 kilogram
  6. Sliced Tomato - 3
  7. Slit Green chili - 4
  8. Garlic - 10 clove
  9. Ginger - 2 inch piece
  10. Chili powder - 3 teaspoon (tsp.)
  11. Turmeric powder - 1/2 teaspoon (tsp.)
  12. Curry leaf - 1 sprig
  13. Coriander leaf - handful
  14. Mint leaf - a handful
  15. Oil - 1/4 cup
  16. Salt - as needed

PREPARATION:

  1. Cook the rice with bay leaf until it becomes puffy and keep it aside. NOTE: don't cook rice sticky
  2. Grind ginger and garlic to a fine paste.
  3. In a pan heat oil add cinnamon stick, curry leaf and sauté for few seconds.
  4. Now add onion, green chili and sauté until onion turns translucent.
  5. Now add chopped tomato and sauté until they become mushy.
  6. Now add ginger garlic paste and sauté until the raw smell is gone.
  7. Now add coriander leaves, mint leaf and sauté until they sautéed.
  8. Now add chili powder, turmeric powder, salt and sauté until oil separates.
  9. Now add the shrimp and cook until the shrimp is cooked and masala is thick.
  10. Now add the cooked rice mix well and serve.

NOTES:

  1. Trick is to get the right consistency of masala to rice ratio. it the masala is think then biryani will be watery.
