INGREDIENTS:

  1. Cinnamon stick - 2 inches
  2. Cloves - 2
  3. Cardamom - 2
  4. Shallots - 4
  5. Garlic paste - 2 teaspoon (tsp)
  6. Ginger paste - 2 teaspoon (tsp)
  7. Hot green chili - 3
  8. Mint leaves - 1/2 cup
  9. Coriander leaves - 1/2 cup
  10. Tomatoes - 2 or 3 small
  11. Yogurt or curd - 2 table spoon
  12. Mutton (goat or lamb) meat - 1/2 kilo gram
  13. Hot chili powder – 1 and 1/2 teaspoon (tsp)
  14. Coriander powder - 1/2 teaspoon (tsp)
  15. Turmeric powder - 1/4 teaspoon (tsp)
  16. Garam masala powder - 1/2 teaspoon (tsp)
  17. Lemon - 1 small
  18. Saffron powder (optional) - 1/4teaspoon (tsp)
  19. Ghee - 2 teaspoon (tsp)
  20. Oil or Olive Oil - 2 tablespoon (tbsp)
  21. Salt - to taste
  22. Basmati rice - 1/2 kilo gram or 2 cups
  23. Water - 3 1/2 cup

PREPARATION:

  1. Cut the onions in small pieces, cut the hot green chili or split them.
  2. In a heat oil, ghee. Add cinnamon stick( break it into small pieces), cardamom, cloves and cook for 1 min
  3. Now add the cut onions and cook until the onion turn to golden brown. Then add ginger paste, garlic paste and cook for about 2-3 min.
  4. Now add the green chili, coriander leaves, mint leaves stir and cook for 1 or 2.
  5. Now add the cut tomatoes, hot chili powder, coriander powder, turmeric powder, garam masala powder, yogurt(curd), salt, mutton pieces  and cook until oil separates.
  6. Once oil start to separate now add half of the water cover and cook until meat is done. ( if you use pressure cooker you can let it for 2 whistle). Try not to add more water.
  7. Once the meat is cooked add rest of the water and lemon juice. if you need more salt you can add now.
  8. Now add the washed basmati rice ( strain as much water you can) and cook until it starts to boil.
  9. Simmer and cook in low heat until the rice is done. NOTE:  Have to be careful or you will burn the rice at the bottom. In case you have less water you might want to cover the pan with aluminum foil, close the lid and place a heavy weight. if you use pressure cooker you can cook for 2-3 whistle.
  10. Now add the saffron powder mixed in little water and stir the mixture. Again Simmer and cook in low heat for 2-3 min.

NOTES:

  1. Serve this biryani with  boiled egg...
