INGREDIENTS:
- Idli batter (Fermented) - 1 cup
- Egg - 2
- Sliced Shallot (Sambar onion) - 5
- Finely Chopped Green chili - 2
- Finely Chopped Curry leaf - 10 count
- Mustard seed - 1/4 teaspoon (tsp.)
- Split black gram - 1/2 teaspoon (tsp.)
- Oil - 2 teaspoon (tsp.)
- Salt - as needed (note batter will have salt)
PREPARATION:
- Beat the egg well in a bowl and add to batter and mix well. Add salt as needed and beat well.
- In a pan heat oil. Add mustard seed, spilt black gram. Once the mustard seeds stop splattering add chopped shallot (sambar onion), green chili, curry leaves and sauté until the onion turns translucent. Add this once it reached room temperature to egg batter and mix well.
- Cook this in Kuzhi paniyaram skillet as paniyaram and serve.

- Heat kuzhi paniyaram skillet. add oil to the kuzi(mold) and heat it.
- Now add batter to the kuzhi (mold) a to so it covers 3/4th of the kuzhi. lower the heat and cook
- Once cook on this side. now filp and cook on the other side
