INGREDIENTS:
- Basmati rice - 1 cup
- Cauliflower - 300 grams
- Green beans - 150 grams
- Carrots - 150 grams
- Potatoes - 2 medium size
- Cloves - 3
- Cinnamon sticks - 1/4 inch
- Cardamom - 2
- Onion - 2 small
- Hot green chilies - 4
- Ginger root - 1 inch
- Garlic - 3 cloves
- Oil - 1/4 cup
- Mint leaves - 1/2 cup
- Salt - to taste
PREPARATION:
- Cut the cauliflower, green beans, carrots and potatoes into big pieces
- Cut the onion and hot green chilies into small pieces.
- Make a paste with ginger and garlic.
- Heat oil in a pan.
- Add cloves, cinnamon sticks, cardamom and onions and cook until onion turns golden brown.
- Add ginger and garlic paste and cook for 2-3 minute.
- Add the cut hot chilies and cook for 1- 2 minute.
- Add mint leaves and cook for 1-2 minute.
- Add add the cut vegetables, rice and 2-2.5 cups of water and bring to boil.
- Now reduce the heat simmer and cook until the rice is done.
