INGREDIENTS:
- Rice - 1 1/2 cup
- Vegetable (potato, green beans, carrot, radish, cauliflower, green peas) - 1 1/2 cup
- Cinnamon stick - 1 inch
- Clove - 5
- Cardamom - 1
- Bay leaf - 1
- Marathi Moggu - 1
- Fennel seed - 1/4 teaspoon (tsp.)
- Chopped Green chili - 5
- Dry chili - 1
- Yogurt - 1 cup
- Chili powder - 1 tablespoon (tbsp.)
- Black pepper - 3
- Lemon - 1/2
- Cumin seed - 1 teaspoon (tsp.)
- Chopped Tomato - 1
- Salt - as needed
- Ghee - 2 tablespoon (tbsp.)
- Oil - 2 tablespoon (tbsp.)
- Coriander leaf - for garnishing
PREPARATION:
- Heat oil, ghee in a pan. add cinnamon stick, cloves, cardamoms, bay leaf, fennel seeds, black pepper, cumin seeds. Once the seeds stop splattering add green chili, dry chili can sauté until green chili is sautéed.
- Now add vegetables and sauté for 2 to 3 minutes.
- Now add the tomato, rice and sauté for a minute. Now add yogurt, 1/2 of chili powder, salt, 4 tumbler of water (make sure the ratio of rice to liquid is 1 cup of rice : 2 cup of liquid) and cook the rice . NOTE: you can transfer this to rice cooker and let it cook.
- Once the rice is cooked add the rest of chili powder, coriander leaves, squeeze the lemon juice. Mix well and serve.
NOTES:
- You can also prepare the biryani in a pressure cooker as well.
