INGREDIENTS:
- Rice - 1 cup
- Chopped carrot - 1
- Chopped green bean - 4
- Chopped cauliflower - 1/ 4
- Green chili - 4
- Sliced Onion - 3
- Mint leaf - 3/4 cup
- Coriander leaf - 1/4 cup
- Cinnamon stick - 2 inch (broken into pieces)
- Cloves - 6
- Cardamom - 3
- Coconut - 1/2
- Garlic - 10 cloves
- Oil - 1/4 cup
- Salt - to taste
PREPARATION:
- Soak rice for 10 minutes. Drain water and keep it aside.
- Grind coriander leaves, mint leaves, green chili, garlic into a fine paste by adding little water as possible.
- -- Making coconut milk --
- Shredded the coconut.
- Add 1 cup of water and grind it in a blender and strain the coconut milk.
- Now add anther cup of water to the grind coconut; grind again and milk.
- Heat oil in the pressure cooker; now add cinnamon stick, cloves, cardamom and sauté for a minute.
- Now add the onion and sauté until it turns golden brown.
- Now add green beans, carrot, cauliflower and sauté for 2 more minutes.
- Now add the ground coriander paste and sauté for 5 more minutes and bring to boil
- Now add the coconut milk, soaked rice, salt to taste; mix well. Cover the pressure cooker and cook for 4 whistle. remove from heat.
- Once the pressure is released; open the lid and serve.
NOTES:
- Goes well with pachadi.
