INGREDIENTS:
- Basmati rice - 2 cup
- Paneer - 200 gram (cut into cubes)
- Mint leaves - from 1 bunch
- Clove - 4
- Cinnamon stick - 1 inch piece
- Chopped onion - 2
- Slit green chili - 3
- Ginger garlic paste - 1 teaspoon (tsp.)
- Water - 4 cup
- Oil - as needed
- Salt - as needed
PREPARATION:
- Cook the rice by adding 4 cups of water and cook them fluffy.
- In a blender or mixer add mint leaves, green chili and grind to fine thick paste by adding water as needed.
- Heat 1 tablespoon (tbsp) of oil and roast the paneer cubes for 3 minutes and keep it aside. In the same pan add more oil and heat it.
- Now add cinnamon stick, clove . once they release aroma add onion and sauté until they turn translucent (golden brown)
- Now add the ground mint leaves, salt and sauté. once the raw smell is gone add the roasted paneer cubes, cooked rice. Mix and cook for another 5 minutes and serve.
NOTES:
- Good lunch pack rice for school or office.
- Good for kids and adult.
