Capsicum (Bell Pepper) Rice recipe

INGREDIENTS:
- Rice (cooked) - 2 cup
- Roasted cashews - 2 tablespoon (tbsp.)
- Curry leaves - 10
- Capsicum (chopped) - 1 cup
- Ground nut (powdered) - 2 tablespoon (tbsp.) (optional)
- Turmeric powder - 1 teaspoon (tsp.)
- Oil or Ghee - 2 teaspoon (tsp.)
- Salt - as needed
- ------------------
- --To Powder:--
- ------------------
- Red Chilies - 5
- Cinnamon stick- 1/2 inch
- Coriander seed - 2 teaspoon (tsp.)
- Cumin seed - 1/2 teaspoon (tsp.)
- Split black gram - 1/2 teaspoon (tsp.)
- Split bengal gram - 1/2 teaspoon (tsp.)
- Shredded coconut - 1/2 cup
- ------------------
- --To Temper:--
- ------------------
- Mustard seeds - 1/2 teaspoon (tsp.)
- Split black gram - 1/2 teaspoon (tsp.)
- Split bengal gram- 1/2 teaspoon (tsp.)
- Red Chilies - 2
PREPARATION:
- Dry roast the "--To Powder:--" ingredients. Let it cool and powder it. NOTE: Be careful and do not let the coconut turn black.
- Heat oil and add the "--To Temper:--" ingredients. Once the mustard starts to splutter add the curry leaves and capsicum and fry till the capsicum changes color.
- Add groundnut powder, turmeric, salt and the ground mixture and fry for a few minutes.
- Add cooked rice and mix well.
NOTES:
- Serve hot with raitha and chips.
