INGREDIENTS:
- Plantain - 1
- Tamarind - a small gooseberry size
- Mustard seed - 1/2 teaspoon (tsp.)
- Turmeric powder - 1/4 teaspoon (tsp.)
- Dry chili powder - 1 teaspoon (tsp.)
- Oil - 1 tablespoon (tbsp.) or as needed
- Salt - 3/4 teaspoon (tsp.) or as needed
PREPARATION:
- Soak tamarind in 1/2 cup water and get juice.
- Remove the skin from plantain and cut into pieces (cubes).
- In pan add tamarind water, plantain pieces, turmeric powder and cook for at least 15 minutes or until the plantain pieces are cooked.
- Heat oil in a pan. Add mustard seeds. once they stop splattering add the cooked plantain pieces, increase the heat and sauté for at least 5 minutes.
- Now reduce the heat. add salt, chili powder and sauté for 4 more minutes or until the plantain is roasted well to golden brown. NOTE: no water should be there only oil.
