INGREDIENTS:
- Pavakkai (bitter gourd) - 200 grams
- Onion - 2
- Tomato - 1
- Green chili - 2
- Chili powder - 1 teaspoon (tsp.)
- Coriander powder - 1 teaspoon (tsp.)
- Masala powder or Garam masala powder - 1/2 teaspoon (tsp.)
- Turmeric powder - 1/2 teaspoon (tsp.)
- Ginger paste - 1 teaspoon (tsp.)
- Garlic paste - 1 teaspoon (tsp.)
- Jaggery (optional) - turkey berry (Sundakkai) size.
- Salt - to taste
- -- For Tempering --
- Oil - 1 tablespoon (tbsp.)
- Mustard seed - 1 tablespoon (tsp.)
- Curry leaf - 5
PREPARATION:
- Cut the bitter gourd into small rings.
- Thinly slice onion, tomato and green chili.
- Fry the bitter gourd in oil until it turns color.
- In a pan heat oil , add mustard seeds once the mustard seed stop splattering add onion and cook until golden brown.
- Now add tomato, green chili and cook until oil separates.
- Now add the ginger, garlic page and cook until raw smell goes (2 minutes).
- Now add chili powder, coriander powder, masala or garam masala powder, turmeric powder and cook for minute.
- Now add 1/2 cup of water, jaggery, salt to taste and bring to boil. Once it reaches a thick consistency.
- Add the fried bitter gourd and cook until its cooked and serve. NOTE: cook until all the water is gone.
