Less Oil Stuffed okra recipe

Okra is called as ladies finger. Stuffed okra is considered to be oily and hard to cook. let see how to cook with less oil and not burnt.

INGREDIENTS:
- Okra (ladies finger) - 1/2 kilogram
- Coriander leaf - for garnishing (little)
- Oil - 2 teaspoon (tsp.)
- Salt - as needed.

- --- For stuffing ----
- -------------------------------
- Gram flour - 2 teaspoon (tsp.)
- Sambar powder or Rasam powder - 2 teaspoon (tsp.)
- Lemon juice - 2 teaspoon (tsp.)
- Salt - 1/2 teaspoon (tsp.)
PREPARATION:
- Clean and slit the okra vertically.
- In bowl add ingredients under "--- For stuffing ----" and little water (1 or 2 teaspoon (tsp.) ) and make a very thick paste (kolukattai consistency).
- Now coat evenly the inner side of the slit okra with the paste.
- In a non wide non stick pan place all the okra (ladies finger) pieces stuffed side facing up (not crowed). Now sprinkle oil on the pieces.
- Now cook this in a very low heat for 4 to 5 minutes with a lid. Flip, sprinkle 2 teaspoon (tsp.) of water and continue cooking 5 more minutes. Continue flipping , 2 teaspoon (tsp.) sprinkling water every 5 minutes until the okra is cooked and fried. NOTE: time to time sprinkle water
NOTES:
- Cooking time: 20 to 25 minute
- Secret of cooking this recipe is to sprinkle water time to time in low heat until the okra are cooked. we have to use this approach since we use little oil. you also need wide non-stick pan so the okra are crowded.
- Sprinkle only 1 or 2 teaspoon (tsp.) of water for good result.
