INGREDIENTS:
- Bitter gourd - 1/4 kilogram
- Ginger paste - 1/4 teaspoon (tsp.)
- Garlic paste - 1/4 teaspoon (tsp.)
- Chili powder - 1 teaspoon (tsp.)
- Coriander powder - 1/2 teaspoon (tsp.)
- Garam masala powder - 1/4 teaspoon (tsp.)
- Mango powder - 1/4 teaspoon (tsp.)
- Fennel seed powder - 1/4 teaspoon (tsp.)
- Dry ginger powder - 1/4 teaspoon (tsp.)
- Gram flour - 6 teaspoon (tsp.)
- Rice flour - 2 teaspoon (tsp.)
- Corn flour - 2 teaspoon (tsp.)
- Finely chopped curry leaf - 2 teaspoon (tsp.)
- Lemon juice - 2 teaspoon (tsp.)
- Salt - as needed
- Oil - for deep fry.
PREPARATION:
- Thinly slice the bitter gourd horizontally (like rings) then remove the seeds and keep it aside.
- Now steam the bitter gourd rings by adding little water as possible with salt.
- Marinate the steamed bitter gourd rings by adding all the ingredients except oil for 10 minutes. NOTE: basically mix all the ingredients.
- Heat oil in a pan to 350 degree Fahrenheit . Now deep fry the bitter gourd until they turn golden brown and serve. NOTE: add bitter gourd in batches to keep the oil temperature close to 350 degree Fahrenheit .
