INGREDIENTS:
- Rice - 1 cup
- Milk - 1 cup
- Split green gram - 1/2 cup
- Black pepper - 1 teaspoon (tsp.)
- Cumin seed - 1 teaspoon (tsp.)
- Finely chopped ginger - 3 inch
- Finely chopped green chili - 2
- Curry leaf - 5
- Cashew - 10
- Asafoetida powder - a pinch
- Oil - 3 tablespoon (tbsp.)
- Ghee - 4 tablespoon (tbsp.)
- Salt - as needed
PREPARATION:
- Pressure cook rice, pigeon pea, 2 1/2 cup of water (or as needed) for 4 whistle and keep it aside.
- In a pan heat oil, add black pepper, cumin seeds, cashews once the cumin seeds stop splattering add ginger, curry leaves, green chili and sauté for 2 to 3 minutes.
- Now add the milk and bring to boil.
- Now add the cooked rice, salt. Simmer and cook until pongal consistency is reached. Now add ghee mix well and serve. NOTE: careful if you stir and cook pongal will get burnt.
