INGREDIENTS:
- -- For Making Boondi --
- Gram flour - 1 1/2 cup or as needed
- Baking powder - 1/4 teaspoon (tsp.)
- Oil - for frying
- -- Making payasam --
- Boondi - 1 cup
- Cashew - little
- Cashew - little
- Milk - 1/2 liter
- Sugar - 1 1/2 cup
- Cardamom - 2
- Ghee - 2 teaspoon (tsp.)
PREPARATION:
- -- Making boondi --
- Mix gram flour, baking powder, water and make batter (dosai batter consistency)
- Heat oil to 350 degree Fahrenheit.
- Hold the boondi ladle (refer to image below) and pour some batter and tap the ladle slightly. Dripping will fall into the oil.
- Fry it for a while, no need to get crispy
- Drain it in a paper towel to get rid of excess oil.
- Heat milk in a pan. Now add sugar and cook until the sugar dissolved.
- Now add boondi and cook for 1 minute and remove from heat.
- In a pan melt ghee and roast the cashew, raisins until the cashew change color and raisins plump up. Add this to boondi payasam and serve.
NOTES:
- Boil the milk to your preferred thickness and add boondi. Boondi should not be spicy and salty.
