INGREDIENTS:
- Kovakkai (ivy gourd) - 1/4 kilogram
- Urulai (potato) - 150 grams
- Mustard seed + split black gram - 1 teaspoon (tsp.)
- Curry leaf - 1 sprig
- Garlic - 3 clove
- Chili powder - 1 teaspoon (tsp.)
- Turmeric powder - 1 teaspoon (tsp.)
- Oil - 4 teaspoon (tsp.)
- Salt - as needed
PREPARATION:
- Thinly slice the Kovakkai (ivy gourd). Add chili powder, turmeric powder, salt. Mix well and marinate for 5 to 10 minutes.
- Thinly slice or cube the potato. NOTE: small the piece it cooks well.
- In a pan heat 2 teaspoon (tsp.) of oil. add mustard seeds, garlic, curry leaves and sauté until the garlic is sauteed.
- Now add the Kovakkai (ivy gourd) and sautae for couple of minutes..
- Now add the potatoes and mix.
- Place a lid and continue cooking. After about every 2 minute sprinkle 1 teaspoon (tsp.) of oil mix well, place lid and continue cooking until the vegetables are cooked.
