INGREDIENTS:
- Drumstick greens - 4 cup
- Chopped Ladies finger - 100 grams
- Shredded Fresh Coconut - 1/4 cup or 1/2 cup
- Puffed rice - 1/4 cup
- Fennel seed - 1 teaspoon (tsp.)
- Small shrimp (optional) - 15
- Onion - 2
- Green chili - 1
- Salt - as needed.
PREPARATION:
- Powder puffed rice and fennel seeds together.
- Grind coconut, green chili into a thick paste.
- Heat 2 cup water in a pan, add ladies finger and cook.
- Once ladies finger is cooked now add the drumstick leaves and cook them.
- Once the drumstick leaves are cooked, now add the coconut paste and cook for 30 seconds.
- Now add the powdered puffed rice, salt. Mix well and cook. NOTE: make sure no lump are formed.
- Now add the shrimp and cook until shrimp is cooked and serve. NOTE: if your koottu is too thick add water as needed.
