INGREDIENTS:
- One inch size cubed Beetroot - 2
- Soaked Split Bengal gram - 100 grams ( soak 10 minutes and drain water)
- Finely chopped onion - 1
- Chopped tomato - 1 small
- Chopped onion - 1
- Hot chili powder - 1/2 teaspoon (tsp.)
- Turmeric powder - 1/4 teaspoon (tsp.)
- Fresh shredded coconut - 2 tablespoon (tbsp.)
- -- For Tempering --
- Oil - 2 teaspoon (tsp.)
- Mustard seed - 1/2 teaspoon (tsp.)
- Broken dry chili - 2
- Garlic - 2 cloves
- Curry leaves - 5
- Cumin seed - 1/2 teaspoon (tsp.)
- Salt - to taste
PREPARATION:
- Heat oil in a pressure cooker add mustard seed and when they start splattering add broken dry chili, curry leaves, garlic and cumin seed and cook for 1 - 2 minutes.
- Now add the onion and until it turns golden brown.
- Now add tomatoes and cook until oil separates.
- Now add the beetroot, chili powder, turmeric powder, salt to taste and cook for 5 min.
- Now add the soaked Bengal gram and mix well for a min.
- Add 1/4 to 1/2 cup of water, close lid and cook for 1 whistle. (don't open the cooker until pressure is released)
- Add the shredded coconut and mix well and serve.
NOTES:
- You can cook this in a pan. Once you add water simmer and cook until the beetroot is cooked.
- Enjoy with puri, rice and curd rice.
