INGREDIENTS:
- Aloo (Potato) - 1 count
- Palak (Spinach leaf) - from 1 bunch
- Shallot (Sambar Onion) - 10 count
- Slit Green chili - 2
- Chopped Tomato - 1
- Salt - a needed
- ------------------------------------
- --- For Tempering ---
- ------------------------------------
- Mustard seed - 1/4 teaspoon (tsp.)
- Cumin seed - 1/4 teaspoon (tsp.)
- Dry Chili - 1 or 2
- Curry leaf - little
- Oil - as needed.
PREPARATION:
- Remove skin from potato and chop to small cubes.
- In a pressure cooker add Palak (spinach leaf), chopped tomato, shallot (sambar onion), slit green chili, salt and cook this for 10 minutes with lid on. Once cooked cool this to room temperature. In a blender or mixer run once or twice to make a mash.
- In pan heat oil. add mustard seeds, cumin seeds, dry chill, curry leaves and sauté until splattering stops.
- Now add the potato cubes and roast them until they are cooked. take about 10 minutes.
- No add the Palak (spinach leaf) mash and bring to a boil. Check for salt if needed add mix well then remove from heat and serve.
