INGREDIENTS:
- Akatthi flower - 25
- Egg - 4
- Finely chopped Onion - 1
- Finely chopped Green chili - 2
- Oil - 2 teaspoon (tsp.)
- Mustard seed - 1/4 teaspoon (tsp.)
- Black pepper powder - as needed
- Salt - as needed
PREPARATION:
- Get the akatthi petals from the flower and chop them in to fine pieces.
- Break the egg into a bowl.
- Heat oil in a pan. Add the flower pieces, onion, green chili and sauté well until they are sautéed well. Now add this to egg and beat well.
- Now add the black pepper to the egg and beat well.
- Heat a skillet apply oil. pour the egg mixture in.
- As the omelette starts to set, lift an edge of the omelette with a spatula and tilt the pan so that the runny, unset portion of the omelette can run underneath and start to set. Repeat on the opposite side
- Once done (cooked on bothe sides) serve.
