INGREDIENTS:

  1. Chopped carrot - 2
  2. Garlic clove - 5 count
  3. Dry chili - 3
  4. Chopped onion - 2
  5. Ginger - small piece
  6. Coriander leaf - little
  7. Oil - 1 tablespoon (tbsp.)
  8. Salt - as needed

PREPARATION:

  1. In pan heat oil. Now add garlic, dry chili, onion and sauté. once sautéed now add carrot and sauté. Once sautéed add coriander leaves, ginger and sauté.
  2. Cool this to room temperature and grind to thick paste and serve.

NOTES:

  1. You can add coconut while grinding if you like. adding coconut will spoil the chutney faster.
  2. You can make chutney like this with radish, cabbage.
  3. If you like you can tempering with mustard seeds, curry leaf.
