INGREDIENTS:

  1. ----------------------------------------
  2. -- To Marinate the chicken ---
  3. ----------------------------------------
  4. Yogurt - 1 cup
  5. Garlic - 1 whole
  6. Ginger - 1 piece (1 inch)
  7. Coriander leaves - a hand ful
  8. Curry leaf - little
  9. Green chili - 2
  10. Clove - 4
  11. Lemon - 1/2
  12. Chili powder - 1 teaspoon (tsp.)
  13. Garam masala powder - 1/2 teaspoon (tsp.)
  14. Black pepper powder - 1 teaspoon (tsp.)
  15. Cumin powder - 1 teaspoon (tsp.)
  16. Salt - as needed
  17. --------------------------------
  18. --- For Biryani -----
  19. ----------------------------------
  20. Raw rice (basmati or Seeraga Samba) - 1/2 kilogram
  21. Chicken leg piece (drumstick) - 4
  22. Chopped Onion - 3
  23. Chopped Tomato - 3
  24. Ginger garlic paste - 2 teaspoon (tsp.)
  25. Chili powder - 1 teaspoon (tsp.)
  26. Garam masala powder - 1 teaspoon (tsp.)
  27. Coriander leaves, mint leaves - a handful
  28. ----------------------------------------
  29. ----- For tempering -----
  30. ---------------------------------------
  31. Cinnamon stick - 2 pieces
  32. Bay leaf - 2 count
  33. Clove - 2 count
  34. Cardamom - 2 count
  35. Star anise - 2 count

PREPARATION:

  1. Measure the rice in cup so its easy to add water later.
  2. Grind all the ingredients under section "-- To Marinate the chicken --" except yogurt into fine thick paste. Mix this paste with yogurt. In a bowl add chicken pieces, yogurt paste. Mix well and marinate it for minimum 3 hours. Now deep fry them in oil until they are cooked 3/4th.
  3. In a pan or pressure cooker heat oil, Now add all ingredients under the section "----- For tempering -----" and sauté.
  4. Now add chopped onion and sauté until it becomes translucent (golden brown).
  5. Now add coriander leaves, mint leaves and sauté them.
  6. Now add chopped tomato and sauté until they become mushy.
  7. Now add ginger garlic paste, Chili powder, coriander powder, black pepper powder, and sauté until the raw smell is gone.
  8. Now add the fried chicken and sauté for couple of min until its well coated.
  9. Now add for 1 cup of rice 1 1/2 cup of water and bring to boil.
  10. Now add the rice and cook. Cook until rice is cooked. if you prefer cook in dum for another 10 to 15 minute and serve.

NOTES:

  1. Goes well with raitha.
