INGREDIENTS:
- Rice - 3/4 kilogram
- Shrimp - 1/2 kilogram
- Thinly sliced Onion - 4
- Chopped Tomato - 3
- Slit Green chili - 3
- Coriander powder - 1 teaspoon (tsp.)
- Ginger paste - 1 1/2 teaspoon (tsp.)
- Garlic paste - 1 1/2 teaspoon (tsp.)
- Chili powder - 1 teaspoon (tsp.)
- Black pepper powder - 1 teaspoon (tsp.)
- Cumin seed powder - 1 teaspoon (tsp.)
- Turmeric powder - 1/2 teaspoon (tsp.)
- Fennel seed powder - 1/4 teaspoon (tsp.)
- Biryani masala powder - 1 1/2 teaspoon (tsp.)
- Tomato sauce - 1 teaspoon (tsp.)
- Cinnamon stick - 2 one inch
- Clove - 6
- Cardamom - 4
- Chopped Mint leaf - 1/4 cup or from 5 stalk (stem)
- Chopped Coriander leaf - 1/4 cup or from 5 stalk (stem)
- Curd or Yogurt - 1/2 cup
- Cashew - 10
- Yellow color (optional) - a pinch
- Rose water - 1 teaspoon (tsp.)
- Oil - 50 milliliter
- Salt - as needed
PREPARATION:
- Soak the rice for 15 minutes in water and cook it by adding 1 cinnamon stick, 4 clove, 2 cardamom, salt.
- In a pan head oil, add the rest of cinnamon stick, clove, cardamom and sauté for a minute.
- Now add 3/4 of onion, green chili and sauté until onion turns translucent (golden brown).
- Now add ginger paste, garlic paste and sauté until the raw smell is gone.
- Now add biryani masala powder, chili powder and sauté them.
- Now add the tomato and sauté until oil separates.
- Now add the prawns and mix well until they are well coated.
- Now add black pepper powder, cumin seed powder, fennel seed powder, turmeric powder, tomato sauce, rose water, salt, a cup of water. Cover with a lid and boil for 5 minutes.
- Now add the cooked rice and spread well.
- In the mean time roast rest of the onion, cashew in ghee and add to the biryani. Dissolve the color in 2 teaspoon (tsp.) of water, coriander leaves and add to the biryani and mix well.
- Now cover the biryani with lid and place a heavy object on top. Simmer and cook for 5 minutes.
- Now remove the lid and mix well. Place the lid again. Simmer and cook for another 15 min and serve.
