INGREDIENTS:
- Mudakathan Keerai (leaves) - from 1 bunch
- Tamarind - little
- Shredded jaggery - 3 teaspoon (tsp.)
- Vadagam (optional) - 1 teaspoon(tsp.)
- Garlic clove - 10 count
- Dry chili - 5 count
- Ginger - small piece
- Cumin seed - 1/2 teaspoon (tsp.)
- Black pepper - 1/2 teaspoon (tsp.)
- Oil - 2 teaspoon (tsp.)
- Salt - as needed
- ----------------------------------------------

- ----------------------------------------------
- Sesame oil - 4 teaspoon (tsp.)
- Mustard seed + split black gram - 1 teaspoon (tsp.)
- Asafoetida powder - a pinch
PREPARATION:
- In a pan heat oil. add vadagam, garlic cloves, dry chili, ginger, Cumin seeds, black pepper and sautae them.
- Now add mudakathan Keerai (leaves) and sauté it.
- Now add tamarind piece, salt as needed, and remove from heat and cool down to root temperature. Add jaggery if you like when cooled to room temperature.
- Now ground the sauteed mudakathan Keerai (leaves), shredded coconut and grind to thick paste.
- In a pan heat sesame oil. add Mustard seed + split black gram, Asafoetida powder and sauté until the mustard seeds stop spattering.
- Now add ground mudakathan Keerai (leaves) paste and cooking until oil seperates then serve.
NOTES:
- You can make thuvyal from curry leaves, mint leaves, vallarai keerai, thoothuvalai keerai in the same way.
- It does not go bad for a week. if you want more shelf life you can add vinegar, more oil.
