Varagu arisi pongal recipe

Healthy dish for regular and diabetic people. Varagu arisi (kodo millet) has lot of micro nutrients. Usually cooked like rice for a change we can see how to make pongal.

INGREDIENTS:
- Varagu arisi (kodo millet) - 1 cup
- Moong dal (Split green gram) - 1/2 cup
- Turmeric powder - 1/4 teaspoon (tsp.)
- Water - 5 to 6 cup
- Cumin seed - 1 teaspoon (tsp.)
- Black pepper - 10 to 12
- Curry leaf - 5 count
- Slit Green chili - 2
- Ginger - small piece (chopped into pieces)
- Cashew nut (optional) - 10 count
- Oil - 1 tablespoon (tbsp.)
- Salt -as needed
PREPARATION:
- Wash green gram, Varagu arisi (kodo millet) separately in water. Drain all the water and keep it aside.
- Heat oil in pressure cooker. add cumin seeds, black pepper, curry leaves, green chili, ginger pieces and sauté. NOTE: usually until the cumin seeds and curry leaves stop spattering and ginger raw smell is gone.
- Now add Varagu arisi (kodo millet) and Moong dal (Split green gram), water as needed, turmeric powder, salt and mix well.
- Pressure cook this for 3 to 4 whistle. Remove from heat and wait for pressure to release. Once the pressure is released serve.
NOTES:
- Cooking time: 15 minutes
- Water to Varagu arisi (kodo millet) ratio is 1 cup : 3 cup
- Goes well with ghee, chutney, sambar.
