INGREDIENTS:
- Parotta - 3 big
- Egg - 3
- Onion - 1
- Tomato - 1
- Green chili - 1
- Chopped coriander leaf - 1 teaspoon (tsp.)
- Chopped mint leaf - 1 teaspoon (tsp.)
- Curry leaf - 10
- Chili powder - 1 teaspoon (tsp.)
- Curry powder or Garam masala powder - 1/2 teaspoon (tsp.)
- Mutton or chicken curry or Vegetable curry - 1 cup
- Salt - to taste
- -- for tempering--
- Ghee or Oil - 2 tablespoon (tbsp.)
- Cinnamon stick - 2 inch
PREPARATION:
- Break parotta into small pieces.
- Chop onion, tomato and green chili into fine pieces.
- Heat ghee or oil in a pan, add cinnamon stick cook till it turns brown.
- Now add onion, green chili, curry leaves and cook until onion turns golden brown.
- Now add tomato and cook until oil separates.
- Now add chili powder, curry powder or garam masala powder, salt to taste, cover and cook for 2 minutes.
- Now add the mutton or chicken or vegetable curry cover and cook for 2 minutes.
- In separate pan heat oil, break the egg, salt to taste and make scramble egg.
- Cover, simmer and cook until the parotta becomes soft. Now add scrambled egg mix well cook for couple of minutes.
- Now garnish with coriander ,mint leaves and serve the kothu parotta.
