Sesame mutton gravy recipe

INGREDIENTS:
- Mutton pieces - 500 grams
- Yogurt or Curd - 2 teaspoon (tsp.)
- Black pepper - 1 teaspoon (tsp.)
- Sesame seed - 2 teaspoon (tsp.)
- Clove - 2 count
- Cashew nut - 6 count
- Cinnamon stick - 1 inch
- Onion - 3
- Tomato - 3
- Coriander leaf - little
- Fennel seed - 1 teaspoon (tsp.)
- Dry chili - 8
- Cumin seed - 1 teaspoon (tsp.)
- Garlic - 10 clove
- Ginger - 1 small piece
- Ginger garlic paste - 1 teaspoon (tsp.)
- Turmeric powder - 1/4 teaspoon (tsp.)
- Star anise - 1
- Oil - as needed
- Salt - as needed

- Curry leaf - little
- Clove - 1 count
- Cinnamon stick - small piece
PREPARATION:
- Chop coriander leaves, one tomato, two onions.
- Grind 2 tomatoes to a puree.
- In a pan heat 1 teaspoon (tsp.) of oil. now add black pepper, cumin seeds, fennel seeds, sesame seeds, cinnamon stick, clove, star anise, cashew and roast them. To this add one chopped onion, dry chili, garlic, ginger and sauté for few minutes. Cool this to room temperature and grind to fine thick paste by adding little water as possible.
- In a pressure cooker add mutton, turmeric powder, salt, ginger garlic paste, yogurt or curd, water as needed and cook the mutton. NOTE: takes 4 to 5 whistle
- In a pan heat oil. add 1 clove, small cinnamon piece, curry leaf and sauté. Now add one chopped onion and sauté until they become translucent.
- Now add one chopped tomato and sauté until they become mushy.
- Now add ground onion paste, tomato puree and mix well. To this add cooked mutton with the liquid, if you need water add water and cook until the raw smell is gone and the right gravy consistency is reached and serve.
NOTES:
- When cooking the mutton don't add too much water. Mutton will release water as well so take this to account when you add water.
