INGREDIENTS:

  1. Egg - 2
  2. Parotta - 5
  3. Ground mutton (goat or lamb) - 25 grams
  4. Finely sliced Onion - 2
  5. Chopped Tomato - 1
  6. Finely Green chili - 2
  7. Ginger garlic paste - 1 1/2 teaspoon (tsp.)
  8. Chili powder - 1 teaspoon (tsp.)
  9. Turmeric powder - 1/2 teaspoon (tsp.)
  10. Black pepper powder - 1/2 teaspoon (tsp.)
  11. Cumin powder - 1/2 teaspoon (tsp.)
  12. Coriander leaf - 5 or 1 stalk (stem)
  13. Lemon juice - 1 teaspoon (tsp.)
  14. Oil - 5 teaspoon (tsp.)
  15. Salt - as needed

PREPARATION:

  1. Make omelet with egg and break it into pieces.
  2. Cook ground mutton by adding 1/2 ginger garlic paste, 1/4 turmeric powder, salt as needed. Make sure no liquid is left, mutton must be dry. NOTE: mutton when cook will release water so add water carefully.
  3. Break the parotta into small pieces.
  4. In a pan heat oil, add onion and sauté until the onion turns translucent (golden brown).
  5. Now add rest of the ginger garlic paste, chili powder and sauté for 1 - 2 minutes.
  6. Now add tomato, green chili and sauté until oil separates.
  7. Now add black pepper power, cumin powder, rest of the turmeric powder, salt and sauté until its sautéed.
  8. Now add the parotta pieces and mix well until parotta pieces are coated well.
  9. Now add lemon juice and mix well.
  10. Now add the egg, cooked ground mutton and mix well for 1 to 2 minutes.
  11. Now add coriander leaves sauté for 2 minutes and serve the kothu parotta.
