INGREDIENTS:
- Egg - 2
- Parotta - 5
- Ground mutton (goat or lamb) - 25 grams
- Finely sliced Onion - 2
- Chopped Tomato - 1
- Finely Green chili - 2
- Ginger garlic paste - 1 1/2 teaspoon (tsp.)
- Chili powder - 1 teaspoon (tsp.)
- Turmeric powder - 1/2 teaspoon (tsp.)
- Black pepper powder - 1/2 teaspoon (tsp.)
- Cumin powder - 1/2 teaspoon (tsp.)
- Coriander leaf - 5 or 1 stalk (stem)
- Lemon juice - 1 teaspoon (tsp.)
- Oil - 5 teaspoon (tsp.)
- Salt - as needed
PREPARATION:
- Make omelet with egg and break it into pieces.
- Cook ground mutton by adding 1/2 ginger garlic paste, 1/4 turmeric powder, salt as needed. Make sure no liquid is left, mutton must be dry. NOTE: mutton when cook will release water so add water carefully.
- Break the parotta into small pieces.
- In a pan heat oil, add onion and sauté until the onion turns translucent (golden brown).
- Now add rest of the ginger garlic paste, chili powder and sauté for 1 - 2 minutes.
- Now add tomato, green chili and sauté until oil separates.
- Now add black pepper power, cumin powder, rest of the turmeric powder, salt and sauté until its sautéed.
- Now add the parotta pieces and mix well until parotta pieces are coated well.
- Now add lemon juice and mix well.
- Now add the egg, cooked ground mutton and mix well for 1 to 2 minutes.
- Now add coriander leaves sauté for 2 minutes and serve the kothu parotta.
