INGREDIENTS:
- Goat or lamb liver - 1/4 kilo gram
- Onion - 1
- Big Tomato - 1 1/2
- Ginger paste - 1 teaspoon (tsp.)
- Garlic paste - 1 teaspoon (tsp.)
- Hot chili powder - 1/2 teaspoon (tsp.)
- Turmeric powder - 1/4 teaspoon (tsp.)
- Coriander powder - 1/4 teaspoon (tsp.)
- Garam masala powder - 1/4 teaspoon (tsp.)
- Vinegar - 2 teaspoon (tsp.)
- Salt - to taste
- Oil - 2 tablespoon (tbsp.)
PREPARATION:
- -- Preparing the liver --
- Remove the light skin on the liver.
- Cut them into 1 inch size cubes.
- Add salt and vinegar soak for 2 - 3 min. Now wash them with fresh water thoroughly, drain and keep it aside.
- Cut onion, tomato, green chili into fine pieces.
- In a pan heat oil , add ginger paste, garlic paste and cook until oil separates and raw smell is gone.
- Now add the onion, green chili and cook until onion turns golden brown.
- Now add the the tomato and cook then until oil separates.
- Now add the liver mix well and cook for 2 minutes.
- Now add the chili powder, coriander powder, garam masala powder, salt to taste and mix well. Cover simmer and cook for 2 minutes.
- Now remove the cover mix well simmer and cook until the liver is done and the gravy reaches the right consistency then serve.
NOTES:
- If you cook liver for a very long time it will turn hard.
