Vegetable Idly Fry recipe

Got leftover idly we can make healthy vegetable fry with it. Excellent snack for a evening.

INGREDIENTS:
- Idly - 15
- Onion - 3
- Tomato - 3
- Carrot - 2
- Green Beans - 50 grams
- Capsicum - 1
- Ginger garlic paste - 1 tablespoon (tbsp.)
- Kashmiri chili powder - 1 tablespoon(tbsp.)
- Oil Ghee (optional) - as needed
- Coriander leaves -to garnish
- Salt - to taste
PREPARATION:
- Cut idlies into cubes and fry them in oil or ghee.
- Finely chop lengthwise the vegetables and onion .
- Heat 3 tablespoons (tbsp.) of oil and add onions, ginger garlic paste and sauté until they become well till it becomes golden brown.
- Add tomatoes and sauté for 2 minutes.
- Add the vegetables, required salt and chili powder and sauté them well. When it is half sautéed, add 1 glass of water and cook the vegetables in low flame.
- When the vegetables are almost cooked until very little water is left, add the fried idlies and mix it without breaking and cook for another two minutes.
- Garnish with coriander leaves and serve..
NOTES:
- Goes well with raitha
