INGREDIENTS:

  1. Maida flour - 500 grams
  2. Black gram - 50 grams
  3. Fenugreek seed - 1 tablespoon (tbsp.)
  4. Cooking soda - 2 pinch
  5. Rava - 6 tablespoon (tbsp.)
  6. Salt - 1/2 teaspoon (tsp.)

PREPARATION:

  1. Steam the Maida flour in cloth for 5 minutes and cool it down.
  2. Soak the black gram, fenugreek seeds  for 2 hours. Now grind the soaked black gram into a fine thick soft batter. When you run the batter between your fingers, it should feel like butter.
  3. Now add the steamed Maida flour to the black gram batter, salt to taste and grind it to a batter consistency for idli.
  4. Add cooking soda to the batter, mix well and keep it overnight or 12 hours so it ferments.
  5. Before you start to make idli add rava; mix well and make idli and serve.
  6. -- Making Idli --
    1. Boil water in idli cooker
    2. Spoon Idli batter into the round indentations of the idli pan. Steam for 5-7 minutes.
    3. Insert a clean matchstick (back end) or a skewer. The skewer should come out clean if the idli’s are done.
