INGREDIENTS:
- Chicken - 1/2 kilogram
- Thinly sliced Onion - 1
- Tomato - 3
- Cashew nut - 20
- Ginger garlic paste - 2 teaspoon (tsp.)
- Clove - 3
- Cardamom - 3
- Cinnamon stick - 3
- Chili powder - 2 teaspoon (tsp.)
- Turmeric powder - 1 teaspoon (tsp.)
- Garam masala powder - 2 teaspoon (tsp.)
- Fennel seed powder - 1 teaspoon (tsp.)
- Cumin seed powder - 1 teaspoon (tsp.)
- Fresh cream - 3 teaspoon (tsp.)
- Dried Fenugreek Leaf (Kasoori Methi) - 1/2 teaspoon (tsp.)
- Unsalted butter - 3 teaspoon (tsp.)
- Oil - as needed
- Salt - as needed
PREPARATION:
- Blanch (Drop the tomatoes in hot water for few minutes then peel the skin) the tomatoes and grind them to fine puree by adding no water.
- Soak the raw cashew nuts in boiling water and grind them to thick paste by adding little water as needed.
- In a pan heat oil. Now add ginger garlic paste and sauté until the raw smell is gone.
- Now add the tomato puree and bring to boil.
- Now add the ground cashew nut paste and mix well.
- Now add the 1/2 of chili powder, 1/2 of turmeric powder, 1/2 of garam masala powder, 1/2 of fennel seed powder, 1/2 of cumin seed powder, little water, salt as needed and cook until the raw smell is gone. Remove from heat once it becomes thick.
- In a separate pan melt butter add clove, cardamom, cinnamon stick and temper (sauté) them. Now add onion and sauté until they turn translucent.
- Now add rest of the chili powder, turmeric powder, garam masala powder, fennel seed powder, cumin seed powder and mix well.
- Cook the chicken pieces in its own juice without adding any water until its cooked. NOTE: cover with at lid and cook in low heat by stirring time to time to avoid burning of chicken. You can sprinkle little water if chicken become too dry before being fully cooked.
- Once the chicken pieces are cooked well add the tomato sauce and cook until the curry becomes thick.
- Before you remove from heat add fresh cream, Dried Fenugreek Leaf (Kasoori Methi).
- Tomato chicken curry is ready to be served.
NOTES:
- Goes well with chapatti, Naan, Ghee rice.
