INGREDIENTS:

  1. Chicken - 3/4 kilogram
  2. Chopped Onion - 2
  3. Chopped Tomato - 2
  4. Ginger, garlic paste - 2 teaspoon (tsp.)
  5. Slit Green chili - 2
  6. Curry leaf - little
  7. Chili powder - 2 1/2 teaspoon (tsp.)
  8. Turmeric power - 1/2 teaspoon (tsp.)
  9. -- Dry roast and powder --
    1. Fennel seed - 1 teaspoon (tsp.)
    2. Cumin seed - 3/4 teaspoon (tsp.)
    3. Cardamom - 3
    4. Clove - 4
    5. Cinnamon stick - 1 inch
    6. Salt - as needed
  10. -- For tempering --
    1. Fennel seed - 1/2 teaspoon (tsp.)
    2. Cumin seed - 1/2 teaspoon (tsp.)
    3. Oil - as needed

PREPARATION:

  1. Clean the chicken. Add turmeric powder to chicken pieces mix well keep it aside.
  2. Dry roast the ingredients under the section "-- Dry roast and powder --" and ground them into a fine powder.
  3. In a pan with low heat roast chili powder until you smell aroma. while roasting make sure you don't burn the chili powder.
  4. In a pan heat oil. add fennel seed, cumin seed wait until they stop splattering.
  5. Now add chopped onion, green chili, curry leaves and sauté until the onion turns translucent.
  6. Now add ginger, garlic paste and sauté until the raw smell is gone.
  7. Now add tomato and sauté until they become mushy.
  8. Now add the chicken, salt and mix well. Cover with a lid and keep cooking for 10 minutes or until the chicken release all the water.
  9. Now add chili powder and cook until oil separates.  (add little water if you needed usually you don't need to add water)
  10. Finally add the powdered ingredients and serve.

NOTES:

  1. Goes well with rice, idli, dosai.
