INGREDIENTS:
- Chicken pieces - from 1 whole chicken
- Coconut - 1
- Chopped onion - 2
- Turmeric root - 1 inch
- Dry chili - 10
- Black pepper - 6
- Cinnamon stick - 2 inch piece
- Cardamom - 4
- Ginger - 1 inch piece
- Cumin seed - 1 teaspoon (tsp.)
- Garlic - 10 cloves
- Clove - 4
- Tamarind - small lemon size
- Vinegar - 1 tablespoon (tbsp.)
- Sugar - 1 teaspoon (tsp.)
- Oil - 2 tablespoon (tbsp.)
- Salt - as needed
PREPARATION:
- In a bowl add chicken pieces, 1 teaspoon (tsp.) of salt. Mix well and marinate.
- Soak tamarind in 1/2 cup and take the juice.
- Grind or shredded the coconut and take thick coconut milk
- Grind turmeric root, dry chilies, ginger, garlic, cinnamon stick, cardamom into a fine thick paste by adding little water as possible.
- In a pan heat oil. Add onion and sauté until they turn translucent (golden brown).
- Now add the chicken pieces and sauté until they are cooked. NOTE: place a lid and cook. Time to time stir to avoid burning. add little water if needed.
- Now add coconut milk, vinegar, ground masala paste, sugar, salt. Reduce the heat to simmer and cook until the gravy consistency is reached. Remove from heat and serve.
