INGREDIENTS:
- Chicken - 1 kilogram
- Shallot (sambar onion) - 1/2 kilogram
- Ginger - 1 inch
- Garlic - 3 cloves
- Chicken masala powder - 4 tablespoon (tbsp.)
- Coconut - 1/2
- Curry leaf -12
- Coriander leaf - handful
- Oil - 4 tablespoon (tbsp.)
- Mustard seed - 1/2 teaspoon (tsp.)
- Salt - as needed.
PREPARATION:
- Keep aside 5 shallot (sambar onion) and chop them.
- Keep aside few curry leaves for tempering.
- In a pan heat 2 tablespoon (tbsp.) of oil. Add rest of the shallot (sambar onion) once its cooked half way through, add ginger, garlic, rest of the curry leaf and sauté for 3 minutes. Cool this down and grind to fine thick paste by adding coconut, chicken masala powder.
- In a pan heat rest of the oil, add mustard seeds, curry leaf for tempering, chopped shallot (sambar onion), sauté until the shallot turns translucent (golden brown).
- Now add the chicken and cook until chicken is half cooked.
- Now add ground paste, salt to taste, water as needed to your preference and bring to boil.
- Cook this until chicken is cooked and curry reached your right consistency.
- Garnish with coriander leaves and serve.
