INGREDIENTS:
- Basmati rice - 3 cup
- Chicken (small pieces) - 250 grams
- Thinly Sliced Onion - 1
- Thinly sliced Green chili - 5
- Ginger paste - 1 teaspoon (tsp.)
- Garlic paste - 1 teaspoon (tsp.)
- Coconut milk - 1 1/2 cup
- Finely Chopped Mint leaf - 1/4 cup
- Finely Chopped Coriander leaf - 1/2 cup
- Curry leaf - 5
- -- For tempering--
- Cinnamon stick - 3 inch (broken)
- Cloves - 3
- Cardamom - 3
- Cumin seed - 1/2 teaspoon (tsp.)
- Fennel seed - 1/2 teaspoon (tsp.)
- Bay leaf - 2
- Oil - 5 teaspoon (tsp.)
- Salt - to taste
PREPARATION:
- Soak basmati rice for hour in water.
- Heat oil, add cinnamon stick, cloves, cardamom, cumin seed, fennel seed, bay leaf and sauté for few minutes.
- Now add onion, green chili, curry leaves and cook for 2 minutes.
- Now add ginger paste, garlic paste and sauté until raw smell is gone.
- Now add chicken, salt to taste, mint leaves, coriander leaves and sauté for 1 minute.
- Now add the coconut milk, 3 1/2 cup of water and bring to boil.
- Now add the soaked rice (drain excess water from the rice), add salt to taste.
- Transfer the rice to pressure cooker or electrical cooker and cook it then serve. NOTE: you can also simmer and cook the rice as well in the same pan.
NOTES:
- Goes well with korma.
