INGREDIENTS:

  1. Mutton pieces with bones - 500 grams
  2. Mutton fat - 100 grams
  3. Crushed Green chili - 4
  4. Coriander powder - 2 teaspoon (tsp.)
  5. Tomato paste - from 1 tomato
  6. Turmeric powder - 1 teaspoon (tsp.)
  7. Chili powder - 1 teaspoon (tsp.)
  8. Chopped Curry leaf - 2 sprig
  9. Coriander leaf - a hand ful
  10. Sesame Oil - as needed
  11. Salt - as needed
  12. --------------------------------
  13. -- For masala paste--
  14. --------------------------------
  15. Shallot (Sambar onion) - 8
  16. Garlic - 8 clove
  17. Cumin seed - 1 teaspoon (tsp.)
  18. Black Pepper - 1 teaspoon (tsp.)

PREPARATION:

  1. Grind ingredients under the section "-- For masala paste--" into a fine thick paste by adding little water as possible.
  2. In pressure cooked add mutton, mutton fat, salt, turmeric powder, water as needed and pressure cook for 4 to 5 whistle.
  3. Heat sesame oil in pan. add the ground masala and sauté until the raw smell is gone and oil starts to seperate.
  4. Now add the chopped curry leaves and sauté until the leaves are sautéed well.
  5. Now add the tomato paste and cook until it boils and raw smell is gone.
  6. Now add chili powder, coriander powder, crushed green chili, little salt and cook until the raw smell is gone and the green chili is cooked.
  7. Finally add the cooked mutton with the liquid and bring to boil. Once boiled well before removing from heat garnish with coriander leaf and serve.

NOTES:

  1. Goes well with white rice.
  2. You can drink this as soup as well.
