INGREDIENTS:
- Potato - 4
- Chopped Tomato - 2
- Chopped Onion (medium) - 2
- Chopped Green chili - 5
- Chopped Ginger - 1 inch
- Yogurt - 2 teaspoon (tsp.)
- Curry leaves - 1 sprig
- Mustard seed - 1 teaspoon (tsp.)
- Split black gram - 1 teaspoon (tsp.)
- Fenugreek seed - a pinch
- Oil - 4 teaspoon (tsp.)
- Salt - as needed
PREPARATION:
- Boil the potatoes, peel and cut them into small pieces or mash them coarsely.
- Heat oil in a pan. add mustard seeds, black gram, fenugreek seeds once the mustard seeds stop splattering add ginger, green chilies, onion and sauté until the onion turns translucent (golden brown)
- Now ad the tomatoes and cook until they become mushy.
- Now add the potatoes, salt as needed and sauté.
- Now add the yogurt and cook. Remove just before the curry starts to boiling NOTE: don't boil after you add yogurt.
- Finally add curry leaves and serve.
