INGREDIENTS:

  1. Kalan / Mushroom - 250 grams
  2. Onion - 100 grams
  3. Hot green chili - 2
  4. Cumin seeds - 1 and 1/2 teaspoon (tsp)
  5. Curry leaves (optional) - 6
  6. Coriander leaves - 20
  7. Hot dry chili - 7
  8. Coriander seeds - 1 teaspoon (tsp)
  9. Shredded fresh coconut - 3/4 cup
  10. Turmeric powder - 1/2 teaspoon (tsp)
  11. Oil - 1/4 cup or as needed
  12. Salt - to taste

PREPARATION:

  1. Cut the onion, green chili into fine pieces.
  2. Dry fry the dry chili (optional).
  3. Cut mushroom into small pieces.
  4. Ground the dry chili, 1 table spoon of cumin seed, shredded fresh coconut, turmeric powder into a fine paste. Add water as needed. (do not add to much water)
  5. In a hot pan heat up oil add cumin seed when it start to splatter add the curry leaves, cut onion, green chili and cook until onion turns golden brown.
  6. Now add the ground paste and stir and cook for 1 to 2 min. Now add 1 or 1 and 1/2 cup of water and bring to boil.
  7. Now add the kalan or mushroom and cook until the raw smell of kuzhambu and the right thickness is reached.
  8. Remove from heat and serve.
