INGREDIENTS:
- Kalan / Mushroom - 250 grams
- Onion - 100 grams
- Hot green chili - 2
- Cumin seeds - 1 and 1/2 teaspoon (tsp)
- Curry leaves (optional) - 6
- Coriander leaves - 20
- Hot dry chili - 7
- Coriander seeds - 1 teaspoon (tsp)
- Shredded fresh coconut - 3/4 cup
- Turmeric powder - 1/2 teaspoon (tsp)
- Oil - 1/4 cup or as needed
- Salt - to taste
PREPARATION:
- Cut the onion, green chili into fine pieces.
- Dry fry the dry chili (optional).
- Cut mushroom into small pieces.
- Ground the dry chili, 1 table spoon of cumin seed, shredded fresh coconut, turmeric powder into a fine paste. Add water as needed. (do not add to much water)
- In a hot pan heat up oil add cumin seed when it start to splatter add the curry leaves, cut onion, green chili and cook until onion turns golden brown.
- Now add the ground paste and stir and cook for 1 to 2 min. Now add 1 or 1 and 1/2 cup of water and bring to boil.
- Now add the kalan or mushroom and cook until the raw smell of kuzhambu and the right thickness is reached.
- Remove from heat and serve.
