INGREDIENTS:
- Garlic - 1 or 2 whole
- Chopped Onion - 1
- Tamarind - a small lemon size
- Fresh shredded coconut - 1/2 cup
- Chili powder - 1 teaspoon (tsp.)
- Coriander powder - 2 teaspoon (tsp.)
- -- For Dry Roasting --
- Cumin seed - 1 teaspoon (tsp.)
- Black pepper - 1 teaspoon (tsp.)
- Salt - as needed
PREPARATION:
- De-skin the garlic cloves.
- Dry roast the cumin seeds, black pepper.
- Grind roasted cumin seeds, black pepper, coconut and grind to fine thick paste by adding little water as possible.
- Soak the tamarind in water for 15 minutes and take the tamarind juice. Add salt to the tamarind juice and mix well.
- In a pan heat oil add garlic, onion and sauté until garlic sautéed.
- Now add tamarind juice and bring the kuzhambu to boil.
- Boil and cook until the kuzhambu becomes thick. Remove from heat and serve.
