Oil kathirikai (egg plant or brinjal) kulambu is a sour gravy based dish with a complex flavor and taste.

INGREDIENTS:
- Kathirikai (Egg plant or Brinjal) - 1/4 kilo gram
- Shallot (sambar onion) - 6
- Sesame oil - 150 milliliter
- Cumin - little
- Salt - as needed

- ---- Dry roast ------------------
- -------------------------------------
- Fenugreek seed - 1/2 teaspoon (tsp.)
- Cumin seed - 1 teaspoon (tsp.)
- Mustard seed - 1 teaspoon (tsp.)
- Black pepper - 1/4 teaspoon (tsp.)
- Dry chili - 15 count
- Coriander seed - 1/4 cup
- Ground nut (pea nut) - 4 teaspoon (tsp.)
- Sesame seed - 2 teaspoon (tsp.)

- -- Roast and grind to paste ---
- -------------------------------------
- Shallot (sambar onion) - 50 grams
- Garlic - 1 with skin.
- Curry leaf - hand ful
- Tamarind - 1 goose berry size (soaked in little water)
PREPARATION:
- Dry roast ingredients under section "---- Dry roast ------------------" one by one individually and grind them to powder individually. Now grind the ingredients under section "-- Roast and grind to paste ---", all the ingredients powder into a thick fine paste by adding little water as possible.
- Slit the Kathirikai (Egg plant or Brinjal) and stuff the with ground masala. i.e. not all of the masala as need to stuff them.
- In pan heat oil. add cumin seeds once tempered. now add Shallot (sambar onion) and sauté until they become translucent (golden brown).
- Now place the stuffed Kathirikai (Egg plant or Brinjal), simmer and sauté. Once well sautéed now add the rest of the masala. Add water s needed and salt as needed and bring to boil in simmer.
- Cook this until oil starts to separate and serve.
NOTES:
- Preparation Time: 10 Minutes, Cooking Time: 30 Minutes, Total Time: 40 Minutes.
- Goes well with whit rice, dosai or idli.
