INGREDIENTS:
- Bitter melon - 3
- Onion - 1
- Tomatoes - 1
- Black pepper – 1 teaspoon (tsp)
- Cumin seeds - 1 teaspoon (tsp)
- Coriander seeds - 2 teaspoon (tsp)
- Garlic - 4 cloves
- Hot dry chili - 4
- Tamarind - 1 lemon size
- Turmeric powder - 1/2 teaspoon (tsp)
- Mustard seed - 1/2 teaspoon (tsp)
- Fenugreek seeds - 1/2 teaspoon (tsp)
- Curry leaves - 4
- Coriander leaves - 10
- Oil - 3 table spoon
- Salt - to taste
PREPARATION:
- Cut onions, tomatoes cut into fine pieces. Soak tamarind in 1 cup of water for 15 min and extract the juice.
- De-seed can cut the bitter melon into small pieces.
- Heat oil in a pan add hot dry chili, mustard seed, black pepper and cook for 1 min or until black pepper start to splatter. Now add curry leaves and cook for 1 min.
- Add coriander seeds, cumin seeds and cook for 1 min.
- Add cut onions and cook until it turns golden brown.
- Add the tomatoes and cook until oil separates. Now add the bitter melon and tamarind juice and cook the mixture until it becomes thick. ( say for 20-30 min).
- Now add the coriander leaves and remove from heat.
