INGREDIENTS:

  1. Chopped Carrot - 100 grams
  2. Chopped green bean - 100 grams
  3. Green pea - 100 grams
  4. Chopped potato - 2
  5. Chopped Onion - 2 or 3
  6. Chopped tomato - 1
  7. Curry leaf - from 1 sprig
  8. Coconut - 1/2
  9. Clove - 2
  10. Cinnamon stick - 1 inch
  11. Coriander powder - 2 teaspoon (tsp.)
  12. Chili powder - 1 teaspoon (tsp.)
  13. Chopped ginger - 1/2 teaspoon (tsp.)
  14. Chopped garlic - 1/2 teaspoon (tsp.)
  15. Water - as needed
  16. Oil - as needed
  17. Salt - as needed

PREPARATION:

  1. Grind coconut into a fine thick paste.
  2. Cook carrot, green bean, potato, green peas in water as needed.
  3. In a pan heat oil. add clove, cinnamon stick, onion, curry leaf and sauté until the onion turns translucent.
  4. Now add ginger, garlic, coriander powder, chili powder and sauté until the raw smell is gone.
  5. Now add the cooked vegetables (potato, green beans, carrot, green peas) and sauté for a minute.
  6. Now add the coconut paste, salt, water as needed. Bring to boil and cook for 5 minutes. Continue cooking until the kurma becomes thick or thick consistency to your preference. remove from stove and serve.

NOTES:

  1. Goes well with chapatti, plain rice.
