INGREDIENTS:
- Sweet mango - 1
- Sugar - 1 cup
- Mango essence - few drops
- Grated ginger - 1 teaspoon (tsp.)
- Lemon juice - from 1 lemon
PREPARATION:
- Remove the skin and nut from the mango and make puree out of the pulp. NOTE: you can also cut to fine small pieces if you want to.
- Heat heavy pan or non stick pan. Add the mango pulp and sauté for 5 minutes.
- Now add the lemon juice and sauté.
- Now add the sugar and sauté in simmering heat for 25 minutes until the mango become thick.
- Now add ginger, mango essence and cook for about 3 minutes until the ginger raw smell is gone. Switch off the stove.
- To pack check by taking a little jam and place in a plate. if does not stick to the place. Store it in glass jar.
NOTES:
- Jam should be cooked in simmering heat so it does not get burnt.
- Don't touch the jam by hand.
- Make sure the bottle and the ladle are sterilized by hot water.
- No moisture or drop of water should be present in glass jar, jar lid, laddle.
