INGREDIENTS:
- Raw rice - 2 cup
- Par boiled rice - 2 cup
- Black gram - a handful
- Cooked rice - a handful
- Shredded coconut - a handful
- Cooking soda - a pinch
- Salt - as needed
PREPARATION:
- Soak raw rice, par boiled rice, black gram in water for minimum 3 hours. Drain liquid and keep it aside.
- In a wet grinder add cooked rice and grind well.
- Now add soaked rice and black gram, water as needed. Once the batter is coarsely grounded add coconut and grind. NOTE: add water as needed to get a batter to make appam.
- Now add salt to ground batter mix well and keep overnight for fermentation.
- Once fermentation is complete make appam in appam skillet serve.

- Heat appam pan and reduce heat to simmer.
- Now add a ladle of batter and spread around the appam pan walls. i.e. lift the pan swirl the batter.
- Cover and cook in simmer for 1 minute or until the appam is cooked and serve.
NOTES:
- Goes well with coconut milk
