INGREDIENTS:

  1. Thinai (foxtail Millet) - 3/4 tumbler
  2. Spit Bengal gram - 1/4 tumbler
  3. Spit black gram - 1 teaspoon (tsp.)
  4. Drum stick leaves (murungai keerai) - 1/2 cup (Chopped)
  5. Chopped Onion - 1
  6. Cumin seed - 1/4 teaspoon (tsp.)
  7. Turmeric powder - 1/4 teaspoon (tsp.)
  8. Chili powder - 1/2 teaspoon (tsp.)
  9. Asafoetida powder - 1/4 teaspoon (tsp.)
  10. Salt - as needed

PREPARATION:

  1. Soak Thinai (foxtail Millet), Spit Bengal gram, Spit black gram in water for minimum 3 hours. Drain the water and grind it to batter by adding water as needed. NOTE: batter should be dosai consistency.
  2. In a pan heat little oil. Sauté onion and Drum stick leaves (murungai keerai). Now add this to batter and beat well.
  3. Now add salt as needed and beat the batter well.
  4. Now make adai with this batter and serve.

  8. Heat a dosai skillet. Coat with oil. Place a ladle of batter and spread it round.
  9. Once cooked on bottom side now flip to other side and cook on the other side to golden brown and serve.
